12 oz. salmon
2 Tbls. lime juice
2 tsp. dijon mustard
1/8 tsp. basil
2 T wine vinegar
1 tsp garlic
1/4 cup feta cheese
2 T olive oil
1 tsp. soy sauce
1/8 tsp. oregano
fresh veggies and greens
Simmer the salmon in water to cover in a skillet with lemon and onion slices, bay leaf and black peppercorns.
Drain, cool and break into large chunks.
Make a dressing by combining olive oil, lime juice, wine vinegar, soy sauce, mustard, garlic, oregano and
basil. Toss the salmon with the dressing and serve with tomatoes, cucumbers, feta cheese all on lettuce and
spinach.
